Amazing 15 Minute Shrimp

This shrimp was delicious, and super easy to make!!











What You'll Need
1.) Shrimp. I used the kind that already had the tails taken off, but they were a little small. Next time I'm going to use the Jumbo shrimp.
2.) 1/2 cup Butter
3.) Lemon sliced
4.) Italian Spices (the recipe called for an Italian seasoning packet, but being gluten free I tend to avoid packaged seasonings)
5.) Cookie sheet



Step 1: Heat oven to 350 degrees and melt the butter in the pan. (while this is melting is a good time to thaw your shrimp and cut your lemon)


Step 2: Take your pan with the melted butter out of the oven, and place the lemon slices in the pan randomly.

Step 3: Spread shrimp evenly on top of the lemon (Here is where you can tell my shrimp weren't big enough), and season.

Step 4: Bake for 15 minutes



After it bakes for 15 minutes, your shrimp is ready to enjoy!! I served mine with rice, but I also think it would be good with pasta or potatoes! Follow me on pinterest!

DIY Coffee Mugs





I love this project!! You can use your favorite quotes, or write something original. 



Either way this makes a great personal gift, or just a great addition to your own mug collection (I know mine is getting pretty big lol) .


What You Will Need 
1.)Plain coffee mug. I used white, but using a color would be pretty awesome as well.
2.)A sharpie of any color. I used black
3.) A cookie sheet
4.) An oven


 Step 1
Write what ever you want on your coffee mug. You can write a saying or draw a picture. It doesn't matter, let yourself be creative!! I made two of them. The first one I made I didn't plan out the spacing very well, so make sure you plan that out before you write.


Step 2
Bake your mug for 30 minutes at 350 degrees. (please excuse my disgusting oven...I think it's as old as this apartment building =/)
 And that's it!! I hope you enjoy your mugs as much as I have. I've been trying to hurry the fall in by drinking lots of hot chocolate and coffee!!

Weenie and Pug

So Saturday on my way to work I found these two adorable dogs! It was a pretty busy street and I was concerned for there safety. When I got home from work I told me best friend about it and he said he wanted the pug. Since their weren't many houses in the area I wasn't sure what to do to find their family. I posted a craigslist add and hoped for the best. I couldn't keep them both in my apartment, so my friend kept the pug, and little weenie stayed with me.






She was so cute, she just want to cuddle and snuggle under the blankets. She went to stay with a vet for a couple days, but had to come back early because she didn't get a long with the other dogs (spoiled little brat :)

Well yesterday I finally received and email from someone who could actually describe these two in detail. When Weenie and Pug saw the guy they couldn't get out of the car fast enough. I'm so glad I was able to reunite this family.

DIY T-Shirt infinity Scarf







I absolutely LOVE this. It's super easy, and free if you use an old T-shirt you already own. (Sorry about the picture quality, the lighting in my living room is horrible!)












Step 1
Pick a shirt. I picked this one because I thought the colors would make and interesting scarf, but you can also use a solid color shirt. I think I want to make a black one next.

Step 2
Cut the shirt right under the sleeves. Make sure you cut all the way across, but don't worry about making it completely straight. It won't matter in the end.






Step 3
Cut strip across the 
bottom going about a 
third of the way up.





This is what it will look
 like when you finish step 3.









Step 4
Now cut strips going across the top, leave some material uncut. 
How much is up to you.

Step 5
I don't have a picture for step 5, but all you do is separate is so you have a large circle, and then you're done.

GF Peanut Butter Cookies


 Peanut Butter Cookies (Gluten Free)

These Peanut Butter cookies were delicious, and super easy to make. My roommate who isn't gluten intolerant loved them as well, he even said he liked them better!

Ingredients

1 cup Peanut Butter (I love Jiff!!)
1 cup Sugar
1 egg

Mix the peanut butter, sugar and egg an a bowl.

Put in the fridge to chill
Preheat the oven to 375
While the oven is preheating make small balls  out of the dough. You won't be able to roll it in your hands like you normally can, you'll just have to shape it.
Press the balls down in the middle with a fork you've dipped in sugar.
Bake for 9 min, let them cool, and enjoy!

Gluten Free Mexican Lasagna

             Mexican lasagna, gluten free and yummy


Everybody loves this, whether they are gluten intolerant or not. This would be a great meal for a family who is not entirely GF (Gluten Free), because it's one dish instead of having too cook separately and have to worry about cross contamination.

Ingredients
3 tablespoons extra-virgin olive oil
2 pounds ground chicken or turkey breast
2 tablespoons chili powder
2 teaspoons ground cumin
1/2 red onion, chopped
1 (15-ounce) can black beans, drained
1 cup medium heat taco sauce or 1 (14-oz) can stewed or fire roasted tomatoes
1 cup frozen corn kernels
Salt and pepper to taste
Corn tortillas
Shredded Mexican blend cheese
2 scallions, finely chopped (optional)
(You could also use taco seasoning instead of the spices but make sure you check the label for gluten, it's sneaky like that.)


 Directions
Preheat the oven to 425 degrees
Preheat a large skillet over medium high heat. Add 2 tablespoons EVOO - twice around the pan. Add chicken and season with chili powder, cumin, and red onion. Brown the meat. Add taco sauce. Add black beans and corn. Heat the mixture through, 2 to 3 minutes then season with salt and pepper, to your taste.
Coat a shallow baking dish with remaining extra-virgin olive oil, about 1 tablespoon oil. Build lasagna in layers of meat and beans, then tortillas, then cheese. Repeat: meat, tortilla, cheese again. Bake lasagna 12 to 15 minutes until cheese is brown and bubbly. Top with the scallions and serve.
